Chile-Lime Seasoning

This time I am not offering any new recipe, just a new seasoning that I think some of you might enjoy. It is from Trader Joe’s and it is wonderful on just about everything. I just tried it–quite a lot of it–on a very sweet cantaloupe and it was pure magic. I have always enjoyed black pepper on melon, so maybe this was not so strange, but the spice and mellowness of this spice blend is a perfect accent to the sweetness of the melon and add cottage cheese–and you have a wonderful summer meal. I did try it on roasting ears of corn. Pop an ear into the microwave with some of its green husk still on for protection and flavor to steam for 5 minutes; Remove the husk and silk–you can hold it by the pulled back husk; Slather in butter and sprinkle on the Chile-Lime. Enjoy.

I also found a recipe. It doesn’t include the sweet red bell peppers like TJ’s, but you can try it:

  • The chili powder. It can be the combination of a ground chiles or just one! Pick your favorites: chile guajillo, chile ancho, chile de arbol, chile california, etc. I would use my favorite-gochugaru, the basic Korean mild chili.
  • The citric acid: This is what will give your seasoning the lime flavor so I highly recommend that you do not skip this ingredient! I used one from Amazon but you can find it anywhere baking ingredients are sold. Use 1 teaspoon for one 1/4 cup of chile powder.
  • Salt: I use 1 teaspoon salt per 1 teaspoon of citric acid. I think this is the perfect balance
  • Sugar: This is optional if you want to give it a hint of Mexican candy or if your chili seasoning comes out too spicy for your taste.
