Cold Japanese Tofu Salad (Hiyayakko)

Cold Japanese Tofu Salad.

This salad is excellent served cold on a hot summer day. It is best served quite cold. You could even serve the tofu on crushed ice and have the condiments served separately.

  • 2 pounds firm or silky tofu,
  • Ponzu or soy sauce or coconut aminos,
  • toasted black sesame seeds.
  • minced seaweed (optional)
  • grated ginger (optional)
  • Bonita flakes, shaved  (non- vegetarian)

Cube tofu and put in plastic bag. Add ponzu or soy sauce or coconut aminos and shake to distribute. Let marinate in refrigerator for at least 1 hour. Serve with minced seaweed, grated ginger, and toasted black sesame seeds. 

OPTION I: flavor with sesame oil and rice vinegar and use toasted white sesame seeds.

OPTION II:  A quarter pound chunk of silky tofu may be served plain with sauce and garnishes on the side.
