Waldorf Salad with Lettuce Wraps

Waldorf Salad.

This version uses either pears or apples, but right now pears are very good, especially with pecans instead of the traditional walnuts. The bitterness of a lettuce wrap complements the salad very nicely. Enjoy!

1 firm pear or apple, diced; seed and core removed and peeled if not organic

2-3 stalks of celery, diced

1 Tablespoon dried cranberries or raisins

1/2 cup cooked chicken (omit for vegetarian version)

lime zest and juice

1/4 cup or more mayonnaise

1/4 cup chopped walnuts or pecans

cardamom and cinnamon to taste

large lettuce leaves for wraps

Lettuce Leaf Cup.

Chop apple or pear and sprinkle with lime juice and zest.Add celery, chicken (if used), cranberries, mayonnaise, spices. Mix and serve in bowl framed with lettuce leaves or serve lettuce separately. May also be served in lettuce leaf cups.
